Recipe: Easy Instant Pot Artichokes

Anyone else freaked out by the idea of an InstantPot? Like you can cook a whole chicken in 10 minutes, just with the click of a button? Also concerned a bomb of steam and food particles might explode in your kitchen each time you use it? CUZ SAME.

I have lots to learn about the wonders of an InstantPot, very much under utilizing this gadget in our kitchen! I do, however, love how simple it makes cooking artichoke hearts! This recipe is a quick, low carb option for an appetizer or side dish.

  • 4 artichoke hearts, stems and spikes trimmed
  • 2tbs minced garlic
  • 2tbs EVOO
  • 1/4 cup grated parmesan or myzithra cheese
  • cracked pepper to taste, approx 1tbs
  • water to fill base of pot

Wash and trim your artichoke hearts. Open the leaves to allow space for the oil. In a small bowl, mix together garlic, EVOO, pepper & cheese. Brush the contents onto each of the 4 artichokes evenly. Fill the base of your InstantPot with 1/2 cup of water. Use the basket insert and place your artichokes inside. Secure the lid on your Instant Pot, make sure your valve is sealed. Select the steam option, cook for 15 minutes. When cooking is finished, move your valve to quick release the steam. Use an oven mit or dish towel to protect yourself from the hot steam!
