EASY 5 INGREDIENT DEVILED EGGS

A QUICK, LOW-CARB WAY TO USE UP EASTER LEFTOVERS

Was I crazy to think that our #socialdistancing Easter Brunch for all of THREE people required a dozen eggs? I’m all for stuffing your face on holidays…but who needs 4 hard-boiled, colored eggs along with the rest of your brunch plate. Not this girl.

Easter Brunch left me with 6 brightly colored, hard-boiled eggs. I could have easily just left these alone as part of meal prep for my upcoming shifts at the hospital later this week; but Taylor had been craving some deviled eggs recently, so this was the perfect opportunity!

This recipe took me about 15 minutes, start to finish, with majority of that time spent peeling the shells off the eggs. Next time, I’ll add some vinegar or lemon juice in the boiling water while I hard boil the eggs…I’ve read that helps the shells peel more easily. Aside from the quick timing of this recipe, it’s an easy, low carb comfort food that’s made with ingredients you probably already have in your fridge/pantry.

Before we jump into how to create these easy 5 ingredient deviled eggs, lets recap how to hard boil your eggs:

HOW TO HARD BOIL EGGS:

  1. PLACE 6 EGGS IN A MEDIUM POT.
  2. FILL POT WITH WATER ENOUGH TO COVER THE EGGS COMPLETELY.
  3. PLACE THE FULL POT ON YOUR BURNER, UNCOVERED, ON HIGH HEAT.
  4. BRING TO A BOIL.
  5. ONCE AT A ROLLING BOIL, REMOVE FROM HEAT, AND PLACE COVER ON POT.
  6. SET YOUR TIMER FOR 12 MINUTES. (we usually like our eggs soft-boiled, and will only set the timer for 7 minutes. for deviled eggs, you want your yolks a bit sturdier, hence the longer cooking time).
  7. AFTER THE 12 MINUTES, IMMEDIATELY PLACE YOUR EGGS IN AN ICE BATH, USING TONGS OR A SPOON TO REMOVE FROM HOT WATER.
  8. COOL EGGS FOR 15 MINUTES.

Now that you’ve got 6 hard-boiled eggs ready to go, lets gather the rest of your ingredients. I bet you already have these in your fridge/pantry!

INGREDIENTS

  • 6 hard-boiled eggs, shells removed & cut in half
  • 3 TBS mayonnaise or full-fat Greek yogurt
  • 1 TBS mustard
  • 1 TBS pickle relish
  • 1 TBS lemon juice
  • Salt & Pepper to taste
  • Optional: Paprika for garnish

PREPARE YOUR DEVILED EGGS

  1. Scoop out the yolks from your halved, hard-boiled eggs. Place the yolks into a sandwich-sized ziplock baggie. (This is the easiest way to mix the ingredients, and pipe the mixture back into the eggs!)
  2. Add the mayo, mustard, relish, lemon juice, salt & pepper to the baggie of yolks. Seal out all the air from the bag, and mush all the ingredients together!
  3. Using scissors, cut a small triangle off one bottom corner of the baggie.
  4. Squeezing the baggie, pipe out the yolk mixture evenly into all 12 egg halves.
  5. Optional: Sprinkle with paprika for garnish.

Other awesome toppings to use as a garnish for these easy deviled eggs:

  • small slice of bacon
  • parsley
  • chives
  • minced red onion
  • small slice of smoked salmon
  • shredded cheddar cheese
  • a few capers
