‘EVERYTHING BUT THE BAGEL’ SALAD FOR ONE

LOW CARB, HIGH FAT, ENTREE SALAD FOR ONE

When I committed myself to a predominantly low carb lifestyle years ago, one all-time-fave carbohydrate meal I knew I’d miss was a bagel with lox. Having grown up in a blended Catholic/Jewish family, I loved those traditional Jewish meals, one of those being lox n shmear *mouth watering* complete with sliced red onion, tomato, and capers.

Ever since Trader Joe’s launched their Everything But the Bagel seasoning a while back, I’ve been beyond thankful for the revival of my favorite bagel flavor without the carbs of the actual bagel. Today I am bringing you all the essentials of a traditional ‘bagel with lox’ in deliciously low carb, salad form. This recipe came together simply from leftovers in my fridge after hosting a family brunch. We served bagels with lox for the rest of my non-low-carb family, so I had all the fixins’ on hand! My mom had made a lemon vinaigrette and an arugula salad, which created also an awesome base for this meal.

I hope you enjoy this entree salad as much as I do. This recipe can easily be doubled or quadrupled to serve 2 or 4. With smoked salmon, capers, and avocado – My kitchen felt like a fancy bistro! Serve with your favorite iced tea or coffee! 

EVERYTHING BUT THE BAGEL SALAD

Handful of arugula

1/4 cup Thinly sliced red onion pieces

2oz smoked salmon, cut to bite size

1oz chunk cream cheese, cut to bite size

1 TBS capers

1/4 of a medium avocado, cut to bite size

1/2 cup cherry tomatoes, halved

A few dashes of Everything But the Bagel seasoning (available at Trader Joe’s & Costco)

Fresh lemon zest

DRESSING:

1 TBS olive oil

1 TBS lemon juice

2 tsp minced garlic

1 tsp salt

Assemble all ingredients in a large salad bowl. Toss with dressing. Enjoy!
